BLOG HOP TIME AGAIN!!!!!!

This time around I wanted to share with you a recipe I got from my Aunt Mayme, it is a lovely, light dessert perfect after any big meal. We used to try to go to Thunder Bay to visit her every year on March break and she always made this one for me.
This isn't the greatest picture of it, but trust me when I say you will love it!
This is basically an upside down lemon meringue pie, the meringue is your bottom crust...how fun is that!


Beat 5 egg whites stiff and add while beating
1 1/2 tsp vinegar
1 1/2 tsp water
2 tsp vanilla
1 2/3 cup white sugar
3/4 tsp baking powder
Pour into large WELL greased cake pan. Bake at 275 for 1 hour. Turn heat down to 230 and bake for an additional 20 minutes. Turn oven off and leave the pan in the oven overnight.

Next morning
mix 1 tin Eagle Brand Milk
1/2 -3/4 cup lemon juice (I like to use more as it doesn't end up with a strong lemony taste otherwise)
1 egg yolk
*Whip 1/2 pint whipping cream and fold into the above mixture. Spread on top of meringue and chill atleast 3 hours.

Your meringue might be puffed up and uneven - just poke it lightly down and then add topping.

Another thing I like to do is to grate a little zest of lemon onto the top of the dessert for a little more zing.

I forgot to leave you one of my fav. recipes - one that I like to make every Sunday morning.
Take one extra large, strong, black coffee, and add a healthy shot of Bailey's. Add a dollop of whipped cream, and chocolate shavings if you like, and it makes a very tasty treat!!! Let me know if you try it!! LOL

I'll have to share this with my mom, she loves lemon meringue.
My fav is Butter tarts.

1 cup raisins, rinsed with hot water
1/3 cup melted butter
1 cup brown sugar
2 tbsp milk or cream
1 teaspoon vanilla
1 eggs, lightly beaten
15 unbaked tart shells

Preheat oven to 400ºF.

Mix butter, sugar, cream, egg and vanilla in a bowl. Add raisins.
Fill tart shells with mixture, Bake for 10-12 minutes, voila.

I like to put rasins in tart shells first, so each tart has equal raisins, but you can just mix in rasins to the brown sugar mixture if you wanted.

1 Cup Skippy Light Peanut Butter
1 Cup Splenda granulated sugar
1 Egg .... Mixx all together ... form your cookies, push down with fork
Back 375 for about 15min

Such a treat!!! I made tons of these for the nurse' bake sale!

That sounds yummy! I'm usually a big lemon meringue gal, but this variation sounds good.

I just have to share my favorite, "in a hurry and forgot about your work potluck lunch and you're signed up to do dessert" chocolate cream pie recipe:

Purchase ingredients after standing at the locked door waiting for them to open at 8am on the day of the event you forgot about... ingredients you should purchase are:
*4 pack of chocolate pudding cups
*premade graham wafer pie crust
*container of cool whip dessert topping

When you arrive at work, huffing and puffing, quickly slip into the kitchen and open up the pie crust and empty all 4 pudding cups into crust, dollop some Cool Whip on top and voila, a tasty, perfectly smooth chocolate cream pie. ;) hahaha!!

Yum - it sounds good. I'm going to try this next time I make dessert.

Here's one of my favoirites. I call it Skor Pie. The receipe was from one of the products in it - I don't remember which one and it didn't specify Skor Bars but that's what I use.

1/3 cup butterscotch Sauce
a graham pie crust.
1 1/2 cups cold milk
1 4 serving package vanilla instant pudding
3 1/2 cups cool Whip - I use the whole container - the smaller one if there are still just 2 sizes
4 skor bars, chopped or broken up

Spread the buttersctoch sauce on the crust. Make the pudding with the milk. Stir the Cool Whip and Skor bits into the pudding. Save a couple of tablespoons of skor bits to sprinkle on top. Put the pudding mix into the crust. Freeze for 6 hours . Let it sit out for about 10 minutes before serving.

whooops...I forgot to leave a recipe too.
PROTEIN WAFFLES to keep you fit and trim and get you moving. These are pure protein and really they taste no different.

2 cups egg whites
2 cups dry cottage cheese curds
2 cups oatmeal
Blend in blender until well mixed, wait a few minutes and pour onto hot waffle iron. If the mixture is too thick, I add a little milk. Toast to a golden brown and top with your favorite fruit. Serve up with turkey sausage for the get up and go breakfast of champions.
My family loves these and asks for them every Sunday.

Sounds yummy! My fav. recipe is just chocolate cookies made from a cake mix then rolled in sugar. Easy & yummy!
